Beef Taco Casserole
- 1 lb. lean ground beef (or turkey)
- 2 cups salsa
- 1 (16 oz.) can chili beans (drained)
- 1 (8 oz.) sour cream
- 1 sm can sliced black olives (drained)
- ½ cup chopped green onion
- 1 lg. tomato (diced)
- 2 cups Cheddar cheese (or any cheese you like, I use fresh)
- 3 cups tortilla chips (I used a flavor variety)
Instructions:
Preheat oven to 350°F.
Spray a 9×13 baking dish (I use olive oil).
Heat large skillet over medium heat. Cook and stir ground beef until brown (I use a meat masher to crumble), 8-10 minutes.
Stir in salsa, reduce heat and simmer until liquid is absorbed, about 20 minutes.
Spread crushed tortilla chips in bottom of baking dish, spoon over beef mixture on top.
Spread chili beans next. Spread sour cream over that.
Sprinkle olives, green onion, and tomatoes on top. Cover with cheddar cheese.
Bake in preheated oven until hot and bubbly, about 30 minutes.
