Easy Breakfast

*Breakfast sausage *6 eggs *mushrooms of your choice *can of diced tomatoes of your choice *bag of spinach Makes 6 servings In a shallow skillet, sautee your mushrooms (I use olive oil) When sautéed to your desired consistency scramble 6 eggs and cook with mushrooms. While sauteing mushrooms, cook in a deeper skillet breakfast sausage ( i use ekridge with sage. When finished cooking, add a can of tomatoes. I use Velveeta tomatoes with chili’s and add your spinach and cook down while covered. Once the spinach is to your desired consistency, add the mushroom and egg mixture. Cook together uncovered until juice is gone. Serve with a slotted spoon.
