As a casual widow, to save money and time, I cook once a week (generally Mondays). The only other time I cook is for a potluck event with the tiny home community that I live in.
I mainly cook 2 dishes. One for breakfast and one for late afternoon. I put in glass containers w/ plastic lids about 6–7 servings of each meal. I then have something that I can pop in microwave of extra meals I have stashed in freezer. So sometimes I might cook beans and rice or another casserole.
I don’t mind eating the same meals over and over. Sometimes if I want a slightly different taste, I will add a sauce of my choice that I have on hand.
I try not to use anything that is bad for my health. Sometimes for a quick option I will choose bagged chips, but for the most part I choose the best options of food, and the best cookware (stainless steel) and the best storage (glass w/ plastic lids — not microwaving or heating up lid in dishwasher either — heck I don’t own a dishwasher) because I live in a tiny home.
I not only care about the food I ingest but the cleaning products I use in my home, and the stuff I use on myself. I’ll go into that later.
